I recently watched Quigley Down Under again after not having seen it in awhile. I love all the funny, witty dialog in this movie. I still find myself chuckling over some of it several days later.

Lots. Usually comedies from the 80s like Tootsie (just check Bill Murray's speech in the movie for an example) or Back to the Future (lots of moments, the Ronald Reagan thing for instance).
On recent movie, I guess Cameron Crowe stands out as one of the best dialogue writer still alive.

I agree with pretty much all of these, and there are a great many more classics my friends and I find ourselves quoting. But recently we've been dropping lines from The Departed left and right.
