I love movies like A River Runs Through It and the Old Man in the Sea, or the Ghost and the Darkness, but there seems to be only a few movies that are set in the great outdoors and show great scenes about hunting and fishing. Can anyone recommend their favorite outdoor, hunting or fishing movies?

Not really a hunting (at least in the traditional sense) or fishing film but definitely an outdoors film -The Edge - with Anthony Hopkins and Alec Baldwin is a favorite of mine.

edited to add: or how about John Wayne and Howard Hawks' Hatari. Just a so-so movie but maybe The Roots of Heaven with Trevor Howard and in a small role Errol Flynn. Always glad to have the opportunity to mention my two favorite actors - John Wayne and Errol Flynn.

The delightful "Gone Fishin'" with Joe Pesci and Danny Glover is probably about fishing (although I think there's an alligator in it at one point)
