Movie scenes that were better than the books
I thought the Ring wraiths were better in the movie than the book. PJ really brought them to life and gave them a sense of evil.
I also liked the bigger role that Saruman played in FOTR much better than the quick desriptions that were given about him in the book.

PJ did a great job of making the formation of the Fellowship in the first movie grand. I just read that part in the book and it wasn't the same.

That is tough; it kinda depends on how you picture the scenes from the book. But I would disagree with Saruman being better in the movie. Christopher Lee is great, I just think the movie character is too one-dimensional, and too much a puppet of Sauron.
(In FotR) I think Sean Bean did a superb job. He really did a great job showing the turmoil of his desire for the ring. In the books, I never really sympathized with Boromir very much, but Sean Bean really made me love the character (flawed, though he was). I missed his acting in the second movie.

The ring wraith attack on weathertop. It's barely a paragraph or two in the book and not suspensfull at all.
The flight to the ford after the attack was better in the movie as well IMO, just more suspenseful. It was several days in the book, and Frodo didn't seem to be in as much danger until the very end of it.
I agree with the Amon Hen scene. It's glossed over in the book as well. Boromir's death is much more heroic in the movie as you see him fighting on, rather than just hearing the horn and the Aragorn finding him full of arrows and about to die as in the book.

I'm going to disagree with Boromir's death. I didn't care for Aragorn's "save the day" entrance. While superbly choreographed and shot, the scene seemed unoriginal. Up until that point however, the movie did a better job. That bow wielding orc was a serious bad ass. I preferred Boromir facing death alone though, the horn blows becoming more desperate, him trying to save the hobbits and thus redeeming himself.
Weathertop was better in the movie though. The shot from above with the wraiths closing on the hobbits is a great scene.
