Watching all Star Trek for 2007 - order advice?
Ok, I've been a big Star Trek fan all of my life, but, like most of my DVDs, my near complete ST DVD collection is largely unwatched.
One of my sillier 2007 New Year Resolutions will be to watch all of ST, from start to finish.
Anyone think I should watch Enterprise before TOS?
And I imagine it will ok to watch TAS after TOS, or would it better to intermix some episodes?
I guess I could go in stardate order....but I'm not quite that ocd....probably...

I would watch:
Enterprise
TOS
TAS
Star Trek I-VI
TNG 1-5
DS9 (whenever it started, it was mid-season)1
TNG 6
DS9 2
TNG 7
Generations
DS9 3-7
First Contact (or you could watch this in-timeline, I don't remember when it is though)
Insurrection
Nemesis
Voyager (also could be in order, starts near the end of DS9, but it's not related at all).

I thought the reason why Voyager got lost in space was because it's crew was pursuing rebels who were fighting a Cardassian occupation or something in DS9.
I don't really recall. I only got as far as the Voyager pilot and DS9 wasn't my cup of tea.

Upon further investigation it looks like Voyager Season 1 took place during the beginning of Deep Space Nine Season 3 (essentially, right after TNG ended)

Once you add the movies in there, you're talking almost 2 episodes a day.
I do not envy your task.
Good luck though.

If you're actually willing to do so, I'd go with original broadcast date (including movies). There's a lot of cross-references between the series and the movies and watching them as originally present is the best way, IMO.
A couple reasons: The two-parter Spock TNG episode references STVI. The Scotty TNG episode doesn't correctly reference Generations, but I think watching the ep before the movie makes it a bit more open ended. The Sulu Voyager episode fits nicely after STVI. The TNG episode "Journey's End" and the two-part DS9 episodes "The Maquis" lead indirectly into Voyager.

If it were me, I would not start with Enterprise. Despite being set prior to TOS, the simple fact is it just looks too darn modern and slick, especially with CGI.
Because of the various shows penchant for time travel episodes, you will find that they will pull villains in from later series that have not yet been introduced at that time.
Yes, yes, I know you can argue that though they did not exist at that point time travel, wormholes etc make it possible for them to have appeared at that time, but if you start trying to arrange the various episodes and movies in some sort of chronological order, by the time you have figured that out it will be 2008!
Just watch them in either filmed or broadcast order, it's far easier and less hassle.

If I were you, I'd start with Voyager, pause briefly to watch Insurrection and Nemesis and then move on to Enterprise. Otherwise, it's like running a marathon where the last 40% is a 60-degree incline ... of gravel ... in a driving hailstorm. Pick your favorite show and try to end strong on that. This is a long journey -- you want to feel good about it when you're done, not bitter. If you're a TOS fan, end with The Undiscovered Country. TNG fan? "All Good Things" or First Contact. DS9 fan? "What You Leave Behind". Voyager fan? Why are you talking to me? Look, I don't know you.

Easy fix for that: watch the last five eps of ENT in this order, it won't affect any storylines.

'Enterprise' takes place before 'TOS' chronologically, but the events of 'Enterprise' are affected by the events of 'First Contact', so it probably wouldn't make sense to watch it first.
Personally, I wouldn't reccommend doing it strictly by broadcast once there are multiple seasons; later seasons of DS9 should be watched straight through, not interrupted by the irrelevant 'Voyager', and I don't know of any major reason why the early seasons would be directly related to seasons of 'TNG'. I might see the value in alternating seasons between the last few of 'TNG' and the first few of 'DS9', but so much of the later seasons of 'DS9' depends on a good memory for the early seasons, so I'd think 'TNG' in the middle would just kind of clutter it up.
'Insurrection' (if not 'First Contact' and/or 'Nemesis') does specifically refer to Worf returning to the Enterprise from DS9, though.
TAS takes place after TOS. (Though, technically, Roddenberry apparently declared that TAS was not canon.)

And I imagine it will ok to watch TAS after TOS, or would it better to intermix some episodes?

TAS is supposed to be squeezed somewhere in between Turnabout Intruder and the first movie. And the "non-canon" thing came about from some guy named Richard Arnold, who was working for Roddeberry and/or Paramount who tried to "streamline" the franchise by declaring all books, including the detailed FASA gaming resources as not being canon, so as to keep production of TNG "clean", without having a big backstory to have to keep up with. IIRC, even The Original Series was relegated to some sort of secondary canon, as in, there were adventures with Jim Kirk and crew, but if the writers of TNG needed to contradict something stated in TOS, they could if they wanted.
Personally, TAS was done by Roddenberry, with most of the original cast, and with many of the original series' writers, and there have been many things referenced in later treks that have drifted their way into canon-icity, so I consider it canon. Any blatant errors can be attributed to them being in-universe dramatizations of the adventures of the legendary James T. Kirk, and some details were changed for security reasons.

Off topic: I was reading the other day that somebody is taking the original audio from "The Time Trap" TAS episode and redoing the animation in CGI.
Sounds interesting.
ETA: Fall 2007.

(not to mention that the lackluster series finale benefits a bit from viewers being familiar with a STAR TREK: THE NEXT GENERATION episode called "The Pegasus").
The Tribble eps in DS9 was great because you already knew about in TOS.
ENTERPRISE's "In a Mirror Darkly" is great as a standalone show, but it is even better if you watch the other shows "Mirror" eps first.

Not to mention the fact that In a Mirror Darkly actually retconned a TOS episode into the Mirror saga. The Tholian Web deals with the ship crossing universes, but it wasn't until ENT that the connection was made.
FYI, from Wikipedia, the official Mirror episodes in production order.

TOS 204 "Mirror, Mirror"
TOS 309 "The Tholian Web"

DS9 608 "Resurrection"
DS9 712 "The Emperor's New Cloak"

For some reason, I wasn't getting the email that my topic had responses, so I thought it died a lonely death.
But wow, thanks for the responses all!
I think I'll go with the "filmed order" advice.
I do fear the suicidal thoughts from watching that much Voyager near the end, maybe I'll skip Voyager. The 30 or so episodes I watched back when they were first broadcast were fairly dreadful. I actually don't even own them yet (except the bonus discs). I think I own every other ST disc, and planned to buy the Voyager complete set when I found it super cheap somewhere just for completist sake.
2 episodes a day! Really? Wow, I didn't think it would be that many. If I finish this task I'll sadly be very proud of doing so. Maybe I'll make it a 5 year mission.

I'm catching my girlfriend up myself and did:
Star Trek II-VI
then Star Trek: TNG Season 1, but she was basically falling asleep watching these season 1 episodes. And... I can't blame her.
