Nintendo's official page for the NES Classic claims that it will return in Summer 2018.

I was out with my son and his friend last night, and we saw them in-stock at a couple of Targets. So, they're definitely trying to keep up with demand.

If they do decide to start producing the NES...

It was locked in the display case at the store I was at. Along with the Switch and a bunch of 2DS XLs.

I actually found 2 of these tonight at a random Target that we stopped at. I debated for a good 20 minutes but ended up getting one. Wife wasn't sure of what to get me for Christmas, so it worked out...
