Having all the the time in the world to do anything can be very listless and boring, if there is nothing meaningful to do. As paradoxical this may sound.
I experienced this first hand after my family disintegrated. (My kid passed away at a very young age, and a subsequent divorce).

This is rather a trick question. Because you only say "more free time," and not the almost required "more money" which goes hand in hand with doing things with "more free time."
So, those who say travel, I hope you've got a big nest egg saved up, as travel get super expensive, super fast! I'm tempted to say travel as well, but the travel time would be rather short before the money was depleted. Then, I'd be left with lots of boredom, money woes, and lots of free time, a recipie for depression and disaster.
So, your question as posed has Twilight Zone implications...
I'll go with the easy answer of "read more" and "learn more" since those things don't cost very much and take as much time as you can imagine. Always more to read, always more to learn.

I have several dozen model kits I never have the time to get to.
I'd put up an elaborate outside Christmas display each year.
I'd try and grow pumpkins.

I talk to a lot of people who can't wait to retire then two months later they are bored. Even with woodworking in the winter and golf in the summer I still plan on working for a long time.
I wish I had time or energy to get back into martial arts. I loved the training, both karate and Jiu Jitsu. Unfortunately when my hip needed replacement I just couldn't train any more because it hurt too much. My plan was to go back after I healed but I keep pretty busy with other things.

Only you can turn a positive life enriching activity and make a negative spin on it.
No one ever gave a time frame on travel. Doesn't have to be a month, 2 months, 6 months where you would need a lot of income. It could be a week, 2 weeks. And people do take multiple short term vacations per year.

Re: If you could do only one thing with more free time, what would it be?
That happened again for me last year. My husband and I decided to take a midlife break. He quit his job, and I didn't take a new travel assignment and we moved back to my house in Oregon. I was off about 5 months, and he was off about 9. Two of my kids were still living at home, and in the summer, they were off too. We were a family of NEETs (not in education, employment or training). Our NEET-bucks were funded by savings, because we'd had good jobs before. Outside of travel, which was good, we mostly sat around playing computer games and developing poor habits. I did learn how to ferment vegetables, but that was about it. It made me rethink retirement--I think working less rather than not working at all would work better for me in my senior years (if I can).
For the poll, I picked other: travel. While we were off, we did a cross country road trip (move), a couple Oregon trips, Disneyland/Southern CA, NYC (job interview trip), and Seattle (also interview trip). My kids went to Mexico and Thailand during that time, too. Since starting working again, we've all been a lot more constrained geographically.
