How IN THE WORLD can people eat cheese on food that smells like dirty stinkin' feet?

Maybe someone out there with some insight can help me smell the light. Maybe not!

Here's my current predicament:

Treesa just made some pasta, and when she added the cheese...it stank up the ENTIRE HOUSE!

You know, it was so strong that I believe it actually BROKE the cheese barrier, and crossed over into the Amyl Nitrate Zone, and let me tell ya...I was seein' STARS!

For the OtterVille Record: I've never personally used the nitrate stuff (couldn't stand the smell) but I spent over a decade spinnin' records in just about every dance club out here in Los Angeles, so I know what that stuff stinks like.

...and sure, her being Italian (and Swedish & Dutch) is something I truly, Truly, TRULY Love...However, tonite she violated my feminine side and stretched the decent boundries of my nostrils.

For the very first time in our marriage, I actually asked her to 'CUT THE CHEESE'!

I don't know. I got one of those "white" pizza slices the other day. It had gobs of ricotta on it. By the end of the slice, I wanted to vomit. No ricotta cheese for awhile.

I used to work at a place about 15 years ago that had the best "White" pizza. It had a ricotta cheese spread, provalone, canadian bacon and banana peppers. Then it was cooked in a wood/fire roasted oven. It was yummy.

the 5 cheese pizza was one of my faves in italy

and they used the real pungent cheese on it. not the processed crap you find here in the USA with no flavor

There used to be a chef who ran a little bistro called Humphreys' at the corner of Carlisle and Central here. He was on the local news doing cooking stuff quite a bit, he was a cut above as to the food there. He made a cheese pizza with real Gorgonzola(not some toned down stuff). It was really good but that cheese was stout. I only got it maybe every third trip to there.

I like a Quattro Formaggi pasta with strong Gorgonzola too. Yum.

That's about as strong as I go with cheese though.

Real (stinky) cheese is the only cheese there is. This other stuff is gross cheese "food" product. You can't even get GOOD cheese in the US - the best is unpasteurized.

Theres only two cheeses that I know of that I wont touch - Cottage Cheese and Limburger...I imagine all others I would like...

I love-

Ricotta - even with just salt and pepper..

Provolone
Parm...
Romano
Asiago

Not quite sure where you're shopping, but the US has great cheeses, from all different parts of the country. And yes, you can get raw cheeses in the United States. The only time you can't is when you are dealing with a cheese that has been aged less than 60 days. Which mainly covers your soft ripened varieties.

Cowgirl Creamery, Mouco, Cypress Grove, Haystack, and Rogue Creamery produce some of my favourite cheeses in the States.

I'm fine with Parmesan, Asiago, and ricotta, but I can't stand feta. Tastes like something that was scraped out of a zombie carcass.

I've smelled Limburger cheese once, and I never even want to smell that shit again, let alone taste it...

It shocks me to discover that the sophisticated palates of Otter don't like any cheese that isn't spelled with a z at the end.
