I've seen a very effective one that is basically half of a standard keyboard, with an extra shift key that'll change the letter to the corosponding one, that'd be on the other side of a keyboard ("F" would be "J", "Q" would be "P" etc.) It takes some getting used to, but if you learned to type using homerow, you pick it up right away.

My sister-in-law only has use of 1 arm, and she has one of these keyboards where she works. She can type as fast as I can with two hands
