I would like to compile a list of moving/emotional pieces of instrumental music. From piano solos to full blown orchestra. Songs that give you watery eyes every time you listen to it. Thanks.

Schubert's "Moments Musicaux D780 #2" is the saddest piano piece I know.
Respighi's baroque "Ancient Airs and Dances: Bergamasca" is probably the most exhileratingly beautiful classical work I have heard. |

Pure south-west melancholy perfection. The video's a little goofy, so just close your eyes and listen. |
You can always make a case for Samuel Barber's "Adagio for Stings".
But I personally like "Your Hand In Mine" and "Day 6" by Explosions In The Sky. Even more when I hear them live. |

It's only about 3 minutes, but the title track on "Mellon Collie and the Infinite Sadness" always evokes emotion in me.
