In terms of being evocative, my vote is the open titles track to Blade Runner. The first booming base drum hit and then the high, reverbed synth line instantly sets the tone of the entire movie. It's probably my favorite soundtrack.
If you want to talk something that was actually released on an album, I really like "The Great Skua" by British Sea Power (please ignore the irritating fan video):

It's a B-side from "Perfect Strangers", but it's also one of my favorite tracks by them. Fantastic guitar work.

The entire score for 'The End', the series finale of Lost, by Michael Giacchino. I got it on CD today and have already listened to it several times. It's a perfect culmination of the work he did on the show for six years.

Coxon's guitar sounds so far away and detached, which I'll assume was intentional. I'm a huge fan of reunions or giving a friendship/relationship a proper ending, so the song just really hits me.

I love and agree with virtually everyone's choices here. I know there's a lot of music that makes me emotional, but this one comes to mind above all else for me:
