The Late Great Michael Hedges' acoustic cover of Bob Dylan's "All Along the Watchtower".

In fact, Hedges has TONS of great acoustid solos.....

Agree completely. Also, Kottke's duo album ("Clone") w/ Mike Gordon on bass is incredible.
