For most of those cameos, if that was an extra doing the mugging, he would have been pulled out of the scene.
With Hitchcock, everyone expected a cameo, so he began doing them at the earliest moment possible in all of his movies, just to get it out of the way exactly so as NOT to pull the audience out of the movie later on. Otherwise people would keep looking for him.

I'd mention Peter Jackson in Bad Taste, but that was way more than just a cameo.

Michael Bay getting flicked like a bug in the first Transformers is a good one.

I know Peter Jackson cameo'd in Dead Alive (A.K.A. Braindead). I'll be honest, The Lord of the Rings isn't my genre. Don't get me wrong, I have great respect for the franchise. Never trashed it. I just prefer a different cup of tea. Lets put it that way. The fantasy genre just doesn't do it for me. But I would sit down and watch them if I was around people that told me to watch it with them.

I don't know about "favorite", but Kurt Wimmer briefly appears as one of the rebels in Equilibrium.
