They do have instantaneous interstellar communication; we saw them sending hologram messages between planets in the prequel trilogy.
As far as Han's "hokey religions" line, well, the galaxy is a huge place with, probably trillions of intelligent beings and maybe a few hundred (or thousand) Jedi. The average person is probably never going to encounter a Jedi in real life, let alone in action. If they do see them on the news, then they're just going to leaping around and swinging lightsabers, probably nothing that would look out of the ordinary in a galaxy populated by exotic aliens, droids, and space ships.
