the only two i could sit through and loved in its entirety were the ones from
"Platoon".

"Iron Man"
i'm not sure if you classify them as docus, but they were feature length and highly engrossing and interesting.

The recently released Cinematographer Style looks good as well. Here's a review of it.
Scorsese's documentaries on Italian and American films are excellent. Apparently he's going to be making one on British films as well. Also worth watching are Easy Riders, Raging Bulls, Z Channel: A Magnificent Obsession, A Decade Under the Influence and A Constant Forge, a lengthy Cassavetes doc included in his Criterion box set.

I would second Z Channel: A Magnificent Obsession. Technically it may fall under TV, but much of it's about movies.
For move making, there's Mad Hot Ballroom.

Modern Marvels did a show on television which isn't too bad. NetFlix has it on disc and streaming.
