That's two and I don't think either are better, but I know it's terrifically popular so don't expect a lot of agreement.

James Bond 007: A View To A Kill should have been one of the first mentioned on this thread. Spectacular opening with the action ski scene. Awesome opening song as well. Then ... regardless if you like this movie or not. The rest of the film never lived up to that opening. Could almost be considered boring at times.

-I am going to have to agree with the person who said Inglourious Basterds. I remember seeing the movie opening day and after 2 1/2 of the longest hours I have ever had, I said to myself "Wow, that movie peaked in the first 15 minutes." I considered, and still do, one of the worst movies released in the last five years.
-Watchmen kinda peaked during the opening, but then you have all of the Rorschak scenes and the origin of Dr. Manhattan.
-Swordfish is definitely one that peaked during the opening.

That was a pretty good list, although Breakfast at Tiffany's and Suspiria were head scratchers.
When A Stranger Calls is the clear winner for me. It's one of the scariest scenes in a movie ever in my opinion, and everything that comes after it just doesn't measure up. What could?
Jeepers Creepers is another good call. If it is on cable, I will always linger on the channel to watch the opening and then change the channel afterward.

The first one that comes to mind is Zombieland. Not even the first scene, but the opening credits.
After clicking on the link I was reminded of 28 Weeks Later. Great example. I also agree with those of you who said Blade.
