Since not one video game has been made into a good movie I doubt any of these would either.

I'd love to see Assassin's Creed and Heavenly Sword.

Ico
Shadow of the Colossus
Half-Life/Half-Life 2
BioShock
Gabriel Knight Sins of the Father / The Beast Within
King's Quest IV: Heir Today, Gone Tomorrow
Laura Bow: Dagger of Amon Ra (mostly, I think a modern 1920s/30s style screwball murder mystery would be fun.)
Zork
Rise of the Dragon
Snatcher
Out of this World / Flashback
Metal Gear Solid
The 7th Guest (sure it'd be a generic haunted house flick, but you know what I haven't seen in a while? A well done generic haunted house flick with memorable music)
Fallout
Baldur's Gate (on second thought, after Dungeons and Dragons and Dungeon Siege, this would be a mistake).

Abso-freakin'-lutely.

Exactly what I was coming in here to post -- along with seconding in-development projects Bioshock and, of course, Prince of Persia.

I agree, I would love to see an E.T. movie. I think a Goldeneye movie would be cool as well.

Those two games had some of the best in-game storytelling to date.

Not to mention some of the most tightly-crafted and entertaining dialogue I've ever seen in Sins of the Fathers -- all delivered from outstanding voice casting. I mean, Tim Curry, Mark Hamill, and Leah Remini? Just can't get any better than that all coming out of an atmospheric, Voodoo culture-bound point-and-click mystery.

Man, they need to wrangle together a next-gen remake of that. I'm sure that trio would be game to reprise their roles, too.

Surely one of the oddest video games of it's time. Didn't you feed the Blob licorice, and in response it would turn into a ladder, or something along those lines?

+1 for Minesweeper! (I was going to say Peter Jackson's PONG, but that would be kind of anti-climatic now.)

LOL Minesweeper

I'd like to see Metal Gear Solid for sure. Though the game feels like a long movie to me anyway.

Still Life by Microids Entertainment. One of my absolute favorites.

The game is practically a movie as is. Thank God the company is back together to make a sequel.
