Tom Cruise always plays Tom Cruise. Name an actor who doesn't always play himself.
Jack Nicholson is always Jack Nicholson in his movies.
Tom Cruise is always plays Tom Cruise in his movies.
Julia Roberts always plays a version of herself.
Name an actor who doesn't do this - someone who always disappears like a chameleon in the role they're playing.
Example:
Gary Oldman. You never know it's Gary Oldman. It's rather Commisioner Gordon, Beethoven, or Lee Harvey Oswald.

Even though I like them both, it feels like Ed Norton and Kevin Spacey are just themselves in most of their movies.
Daniel Day Lewis is a pretty awesome one that doesn't. Russell Crowe is varied enough for me to come off as different in his roles.

You're right about Kevin Spacey. He usually plays intimidating, smooth-talking, creepy guys.

I think it's more of an issue of said actor being so popular, that no matter what role they take, you think of them as themselves. Take for example, Johnny Depp. He brings every role to life, but at the same time , you never have the illusion that it simply isn't Depp.

Gary Oldman was the first person I thought of. He has a wide a varied range of skills and pulls off many different types of roles.
Tom Cruise, well he is just the same bitter angry person he appears to be in real life, except that is all he brings to his work.
