Virginia Madsen does a lot of cartoon voice work; for a while that was almost all she could get.
Robot Chicken never lists who voices whom, but they get a lot of big names to appear on their little show. Charlize Theron did an ep. once, as did Hayden Paniterre (whatever her last name is).
