Typically, "ensemble film" means a film with (more-or-less) a large number of fairly co-equal characters, rather than one or two main characters and a bunch of minor parts.

I would resist including movies simply because their casts are unusually famous, or large, or talented. Structurally, it's almost got more to do with the writing than the casting or acting. Think "montage movies."
