My two faves are The Great Escape and Das Boot. Battle of the Bulge is also REALLY fun, though not too historically accurate from what I hear.

Full Metal Jacket is a must see for war movie fans. Platoon received raved, and critically acclaimed reviews, which in my opinion, Platoon was highly overrated.
Full Metal Jacket is a much better movie than Platoon. Stanley Kubrick's: FMJ war adaptation is very emotionally powerful, and realistic.

Another recommendation of mine would be, Casualties of War, starring Michael J. Fox, and Sean Penn. Both of these movies are exceptionally good.

If the director: Michael Cimino ever decide to edit the boring, overlong twelve minute wedding scene during the first quarter of the film, than the movie probably will be more interesting.

Das Boot would be my favorite war movie but if you include Band of Brothers then that would be tops for me.

Coincidently, I threw in Full Metal Jacket last night. I hadn't seen it in over 10 years. It is an exceptionally good movie. Check it out.

I also thought Platoon was over-rated too.

My list would include:

Saving Private Ryan
Black Hawk Down
Apocalypse Now
Paths of Glory
Full Metal Jacket
Zulu
Bridge on the River Kwai
Das Boot
Patton
We Were Soldiers
Waterloo
Braveheart
Casualties of War
A Bridge Too Far
Troy

The Killing Fields
Spartacus
Empire Of the Sun
