Seven immediately comes to mind for me. For some reason i don't remember Dawn of the Dead's credits, and I saw it twice in theatres. I also really like Kill Bill's credits (both volumes I suppose)
To mention one that has not been mentioned, Napoleon Dynamite has cool opening credits.

Going sort of OT here but... The Space Station IMAX movie they've been showing at the Air & Space museum for the past 2 years or so in DC has some freakishly awesome credits

I gotta say Panic Room as well.
When I went to see in in the theater I was with my parents and they caused us to be a bit late and we missed the credits. I LOVED the film but I held off buying the Superbit DVD for the longest time because I wanted the rumored 3 disc set. I finally broke down and bought the Superbit because of an article about the credits of the movie.
I then bought the super duper version as well.

I'd vote Star Wars but specifically for Empire Strikes Back and, even more specifically, on it's original theatrical run.
I so remember the anticipation for the next chapter in the saga. When the theater lights dimmed, the theater buzzed. Then I saw those words "A long time ago... in a galaxy far far away" I got chills and goosebumps. When the words "STAR WARS" hit the screen the theater roared and cheered!
Man, that was what the movies was about.
