i have always wondered for some reason if they were actually singing on set?

I guess it's possible that they're also singing along, but the sound you're hearing is prerecorded.

Except in the Blues Brothers. James Brown was really singing in the church scene.

There are notable exceptions. I think "The Man that Got Away" from "A Star is Born" (Cukor, early 50's) was live, because there are two different versions of Judy Garland's performance with different sound. These exceptions would be a thread in themselves.

It's funny. I remember when I was a kid, I didn't understand that movie's were edited, had music dubbed over ect. Whenever I watched the Wizard of Oz or something, I assumed that behind the camera was a huge orchestra, playing along with Dorothy singing.

Rex Harrison did all his song numbers live on the set (with pre-recorded accompaniment) in My Fair Lady.
