I'd definitely go for Das Boot, but coming up close would be The Hunt for Red October. I also have a soft spot for Crimson Tide, though it's not as good as the first two I mentioned.
U-571 is a fun movie, if not mind-blowingly good (although I actually appreciated it more the second time I watched it). What makes it outstanding for me is the stunning sound on the DVD. Wow.
K-19 Widowmaker was a movie that had potential, but sunk like a stone in the latter half of the film. It was OK to watch, but not something I'd ever watch again.
U-571 is a fun movie, if not mind-blowingly good (although I actually appreciated it more the second time I watched it). What makes it outstanding for me is the stunning sound on the DVD. Wow.

Actually, Star Trek II: The Wrath of Khan is the best submarine movie - at least as far as the "feel" of two vessels going at each other is concerned. I believe Nic Meyer has said he wanted to caputure the same feel as Das Boot, and I think he may has surpassed it.

The Hunt for Red October
Crimson Tide
The Enemy Below
Run Silent, Run Deep
20,000 Leagues Under the Sea
Depending on my mood I would be comfortable in picking any one of the above. I really enjoyed K-19 Widowmaker (probably my favorite of the 3 mentioned in the poll and maybe just a hair away from being grouped with the other 5 I mentioned) in theaters and I'd give a thumbs up to U-571 as well. I understand the greatness of Das Boot but for some reason it doesn't hold the replay value for me personally that the other titles do.
On a lower tier, I also like sub flicks such as:
Gray Lady Down
Operation Pacific
Torpedo Run
Destination Tokyo
I'm waiting for a price drop on the DVD so I can finally check out Below. As is the case with prison films, one should imho really find a new line of work if one cannot make a halfway decent submarine movie.
