The '80s-style comedy - with charm and laughs, without the bathroom bodily fluid humor. Think John Hughes films, Spies Like Us, My Blue Heaven (which was '90), Brewster's Millions, Trading Places, Vacation, Fletch, Ghostbusters, those types of films. They're just not made anymore. 90% of comedies today fall into romantic comedy or gross-out comedy categories. Some still exist (things like 10 Things I Hate About You, some of Adam Sandler's less crude stuff, Office Space, etc. But there's a tough-to-define kind of style to the '80s comedy that's been MIA for the most part, for years.
And that's not to say that the '80s comedies were tame or bland, and in fact they do have some crude humor. But they just seem to have more redeeming qualities than some of today's. It'd be easy to blame today's entirely business-driven film studio system, but things didn't operate too differently back then.

Horror. Good blood and guts, non-thought provoking, non-"Scream" like Horror. Like the comedies mentioned above the 80's were tops in this genre.
Although "Wrong Turn" may bring some of that back.

While the creative aspect of studios making all movies tailored to get a PG-13 paying movie-going crowd is troubling, so is the lack of nude scenes that is a side affect. Of course, there was "Wild Things" though.

Comedy teams. Not two stars thrown together in a cliche buddy comedy, but teams who rarely did a movie apart. The Bowery Boys, the Marx Brothers, the Ritz Brothers, the Three Stooges, etc.

Either gothic or relentless slasher horror. Imagine combining the two, and I weep for the current state of affairs in the industry today. Sleepy Hollow and From Hell were welcome surprises for me.

More movie serial style action films ala The Rocketeer/Indiana Jones.
Oh, and more good war movies please. I suspect Pearl Harbor may have put the genre on ice for awhile though.

Another vote for the Western. Although the Kevin Costner/Robert Duvall release "Open Range" gives me hope for a revival.
I also wouldn't mind to see the return of good storytelling...but alas, that's probably hoping too much.
