Carter Burwell has always been a favorite, with Miller's Crossing.

Out of the limited selection in the poll I voted for Jerry Goldsmith.

My current favorite is Elliot Goldenthal.

If you want to build a soundtrack collection you should listen to movies you like and find out the name of the composer. I only have a few hundred CDs of scores and I could buy at least a few hundred more. There are so many film scores its hard to narrow down the list of good ones. I was given the score to "Remember the Titans," and I was impressed. I'm not a big fan of Trevor Rabin, but I really enjoy this score.

Also, you may want to look at scores used for trailers. Those tend to get used a lot, and you may be familiar with them.

You may also want to check out some classical music. One piece used in many films is "O Fortuna" from Carl Orff's "Carmina Burana." "O Fortuna" is a piece that directors seem to want composers to emulate as I've heard many versions on scores.
