The two I usally throw in are: Pirates of the Caribbean: Curse of the Black Pearl - Great Audio and Picture Quality.
And Blade Runner: 5 disc - Absolutely perfect in every way!

i finally caved in, and set up the following last night:
sony bravia 52-inch 1080p 120hz with the sony bdp-s350 1080p player.
holy crap.
i spent all evening staring at that thing with my mouth hanging open.
i guess i was most impressed by the imax scenes from 'the dark knight', but was curious as to what other discs you might use to impress your friends and neighbors.
also, as an aside, what are people's thoughts on motionflow? i kept switching it on and off... i can't decide if i like it or not.

My demo disc of choice is usually Baraka or King Kong (2005).

Hmm... I never really thought about this before.
Probably the IMAX scenes in The Dark Knight for video (and the whole film for audio), Kill Bill V. 1 and V. 2 for a completely amazing film-going experience, and any episode of Lost for a fellow fan of the show. The Shining makes a nice reference disc to share with other Kubrick fans as well. The detail is exquisite.

No Country for Old Men still has the most impressive video quality I've seen.
Other good ones for audio/video:
King Kong
Transformers
Incredible Hulk
Casino Royale
The PCM mix on Superman Returns is also one of the best.

I typically use Rambo IV because it looks amazing, but there are some instances in which I will use the silkworm scene from the Caves episode of Planet Earth. I will also from time to time use The Dark Knight, Iron Man, 2001: A Space Odyssey, Kill Bill, Ratatouille, Wall-E, and if I have the HD DVD player fired up, I will use the glow in the dark crustacean scene from Galapogos.

I've usually shown a couple of scenes from Casino Royale. First is a scene at St. Mark's square in Venice and next is the final scene when the camera pans in on the estate near Lake Como. Both scenes have incredible depth to the picture for a fantastic near 3-d effect.
