Smith and Mosier should do commentaries for many 80s flicks. Their Roadhouse commentary was pretty fun, and I'd love to hear their thoughts on Top Gun and other Simpson/Bruckheimer films, John Hughes Films, and a few other Silver films from that era (Commando and Action Jackson, for instance)

That's a really good idea, though I'd double dip quite a bit if that happened. I actually watched Roadhouse twice in a row because of the commentary. One time without and one time with.

Now that there has been time to reflect, I think these would be fascinating:
Elizabeth Berkley and Paul Verhoeven on SHOWGIRLS.
Michael Cimino on HEAVEN'S GATE
Jerry Jameson on RAISE THE TITANIC
Jan DeBont on SPEED 2
Martin Brest on GIGLI (actually, maybe not)
Peter Hyams on A SOUND OF THUNDER
Elaine May on ISHTAR
Kevin Costner on THE POSTMAN
Jeremiah Chechik on THE AVENGERS
Stewart Raffill on MAC AND ME
Tommy Wiseau on THE ROOM
. . . and, when commentaries are finally recordable from beyond the grave:
Terence Young on INCHON
Richard Fleischer on MILLION DOLLAR MYSTERY
Otto Preminger on SKIDOO
Elizabeth Berkley and Paul Verhoeven on SHOWGIRLS.

Re: Who Do You Want to Hear a Commentary From and On What Film?
I'd like to hear commentaries on those movies from pretty much anyone involved with them. I think Thomas F. Wilson might give a good commentary as well. I just recently met Christopher Lloyd and he is very quiet in real life, I'm not sure his commentary would be great or not, but it would be great if he did it.
I think a cool commentary would be one on a bio-pic from the real life person the movie is about. They did this on The Monkees bio-pic "Daydream Believers" with individual commentaries from Davy Jones, Peter Tork & Micky Dolenz. I don't know if it's been done on any other movies but I enjoy that, get the real story from the real people and find out what was changed and whatnot.

Roger Ebert on most of the Hitchcock films. Hell, I wish Roger could do commentary on anything these days

I really wish John Hughes had done more commentaries. The only one I know that he did was the first release of Ferris Bueller (that was later removed).
EDIT: Also, I know there is a Criterion version of Head coming out soon with some kind of special features. It would be great if ANY of the Monkees did a commentary for it. It would be flat out GOLD if all of them did a group commentary. But the chances of that happening are pretty much ZERO.

Lacey Chabert, Amanda Seyfried, and Rachel McAdams on Mean Girls (2 tracks: one as themselves, the other in character) I would add Lindsay Lohan, but with all the mess she's in, she'd probably ruin the experience.
Jeff Bridges, John Goodman, and Steve Buscemi on The Big Lebowski (themselves and in character)
Joe Bob Briggs on Ms. 45
Peter Weir and Anne Louise Lambert on Picnic at Hanging Rock
Paul Verhoeven, Elizabeth Berkley, and Gina Gershon on Showgirls
Winona Ryder, Shannen Doherty, and Lisanne Falk on Heathers
Jennifer Love Hewitt on Can't Hardly Wait
Jennifer Love Hewitt and Sarah Michelle Gellar on I Know What You Did Last Summer
John Carpenter and Kurt Russell on Escape From L.A.
John Carpenter on Prince of Darkness
John Carpenter and Roddy Piper on They Live (I know this track already exists, but as it was never released in R1, I don't have it.)
Pamela Springsteen and Renee Estevez on Sleepaway Camp 2: Unhappy Campers and Springsteen on Sleepaway Camp 3: Teenage Wasteland
Mira Sorvino and Lisa Kudrow on Romy and Michele's High School Reunion (themselves and in character)
Rose McGowan, Rebecca Gayheart, and Julie Benz on Jawbreaker

Re: Who Do You Want to Hear a Commentary From and On What Film?
Stan Lee and Bruce Campbell on Spider-Man. Sure, they had bit parts, but their commentary would be far more entertaining and informative than the Raimi/Dunst contribution.
From beyond the grave: Cast commentary on It's a Mad Mad Mad Mad World.

Re: Who Do You Want to Hear a Commentary From and On What Film?
I was thinking about how Spielberg doesn't do commentaries and was wondering is there anybody you'd want to hear a commentary from and on what movie? I'd also like to throw out there it could be anybody dead or alive, obvious nothing nuts like "I want to hear a commentary from Jesus on 'The Passion of the Christ'"... although that WOULD be interesting...

Ouch!
Damn, that hurt!
Jerks!
What the hell, they couldn't use rope!
Ouch, dammit!
