As per DVD Times:
Paramount Home Entertainment have announced the Region 1 DVD release of Friday the 13th (Uncut, Deluxe Edition) on 3rd February 2009. Sean S. Cunningham directs this horror classic which is given a new DVD release to coincide with the theatrical release of the remake.
Details are slim on the classification, but the Uncut status is backed up by an Unrated US Rating (instead of the previous editions’ R rating).
Extras include:
Commentary by director Sean Cunningham (on the WB international version - trying to access*)
Fresh Cuts: New Tales from "Friday the 13th"
Man Behind the Legacy: Sean S. Cunningham
Friday the 13th - Special Reunion
Lost Tales from Camp Blood - Part 1
Theatrical Trailer - Used on 2004 release
*The wording used here would suggest Paramount are trying to gain approval to use the commentary found on the Warner international DVD releases.
Also released are new Deluxe Editions of Friday the 13th Part 2 and Friday the 13th Part 3 3D. Introducing the Jason we all know and love, these discs are R rated and offer the following extras…
Friday the 13th Part 2
Inside Crystal Lake Memories
Horror Convention
Lost Tales from Camp Blood - Part 2
Slasher Films: Going for the Jugular
Jason Trivia Track (text)
Jason Forever - Used on 2004 release/Best Buy bonus disc
Theatrical Trailer - Used on 2004 release
Friday the 13th Part 3 3D - No extras listed / extras TBC.
Not too impressed with the lack of unrated cuts, and I'm sure of Part 3 is presented in 3D, it will be the old red/blue. Tragic.

Friday the 13th Part 2 -48 seconds were cut by the MPAA to avoid an X rating.
# The following scenes were cut from the film in order to avoid an "X" rating from the MPAA:
* A close-up shot Jeff and Sandra being double-impaled while having sex on the bed.
* A close up shot of Crazy Ralph and the wire cutting.
* A scene at the very end where we are shown the inside Jason's shack and see Pamela's face. While there, her eyes open. It was cut by Paramount for looking too fake.
* A facing shot of Mark's face being split by the machete.
* Blood was trimmed from the shot of Jason driving the hammer in the cop's head.
* The flashback footage showing Mrs. Voorhees decapitation was trimmed.
* Bloodflow was cut from the shot of Jason driving an icepick into Alice's head.
* Additional bloodflow was cut from the shot of Jason slicing Scott's throat.
Friday the 13th Part 3
The following scenes were cut to avoid an "X" rating from the MPAA:
* The death scene of Andy showed his right leg and stomach being cut apart.
* Vera's death was longer, it included more blood and a shot of her reaction. It was cut because the board said that it looked too real.
* Edna's death was cut of excess blood.
* The impaling of Chili with the hot poker was cut. Originally, the impalement was shown, along with a splash of smoldering blood.
* Debbie's death originally showed blood spraying across her upper half and face.

Then again if you own the box set,you know there's no deleted scenes for 2 & 3 so I'm not that surprised they didn't have an unrated cut of either 2 & 3 but they better pick up the slack if they re-release 4, 6, & 7....

The group "commentary" on the R2 disc is not screen specific, it's interview clips lifted from somewhere else and placed onto the movie, it sucks. I hope it's a new commentary. It'd be nice if Tom Savini was on there too.

There were some interesting tidbits on the R2 track, but overall it was pretty patchy - I should have included quotation marks around the word commentary as well. A legitimate commentary track would be nice this time around.

I was hoping for the original artwork, but this works. it could be A LOT worse. And at least they used the classic font, not that stupid one they used on the box and the Parts 5-8 DVDs.

They're something in between the original artwork and modified for DVD, so I like it. It feels familiar and new at the same time. It would be cool if they rereleased the other movies with these covers, too.

I'm ok with it. Knowing Paramount, these could have looked MUCH worse. I wish part 3 had more bonus features, but I guess they assumed that having it in 3-D was good enough. I'll pick up the 1st on BR and the other 2 on day one.

I thought the same thing, but I have a feeling that when the remake of F13 comes out on DVD/BD maybe the rest of the films will get the BD treatment.

Every since I got the Crystal Lake Memories Book, I don't know if I even care about extras anymore. That book is pretty much the end all, be all. I do want to check out that "His Name Was Jason" documentary, though, if it's 14.99 or less. The sheer amount of people involved with it, has interested me.

Re: New "Friday the 13th" Box Set in the Works?
Looks like they're coming out with special editions of 4-6 as well:

Keeping the Friday the 13th excitement going (2009 is truly the year of Jason's return), Paramount Home Entertainment is currently prepping special editions of Friday the 13th Part IV: The Final Chapter, Friday the 13th Part V: A New Beginning and Friday the 13th Part VI: Jason Lives for release later this year. I can't delve into exact special features just yet as they're still being worked out, however, I can tell you that they will include special "fan" commentaries.
The inseparable team of Adam Green (Hatchet) and Joe Lynch (Wrong Turn 2) paired up to chat about The Final Chapter. On A New Beginning expect to hear Steve "Uncle Creepy" Barton, of DreadCentral.com, and horror journalist Staci Layne Wilson muster up some love for the Jason-less sequel. And yours truly joined Barton to bestow our appreciation for Jason Lives (my favorite of the series).
I talk more about the recording, which took place in Santa Monica last Friday, in my blog right here. Paramount's special editions of the first three films street on February 3rd.
