I'm not a big fan of commentaries by the director since they are usually too involved in the film to be able to offer a broad perspective, but then I prefer the more scholarly "film school" type commentaries. Directors also tend to gush about how this actor was great, that actress was wonderful, etc. All in all, some of the dullest commentaries I have ever sat through were committed by the director (yes, I'm looking at you, Friedkin).

On the other hand, I would love to hear a commentary by David Lynch for one of his films, which will never happen.

Of the films I have recently seen, I would have enjoyed a commentary for "The Naked Kiss" since that film is so over the top (in an Ed Wood sort of way) that I want someone to explain to me how it managed to become a Criterion title.

Having listened to the Ronin commentary I wish Frankenheimer hadn't passed away before they finally got around to putting Grand Prix on DVD. I think that one would have been really interesting.

All the Walker Texas Ranger TV sets. Don't know why CBS/Paramount didn't want to approach Chuck Norris to do at least 2-3 commentaries per set.

Ocean's 12 and 13 (even though 12 sucked) Does the HD or Blu Ray of 13 actually have commentary though?

Infernal Affairs: I actually have the Megastar release which has Cantonese commentary by the cast and crew, but no subtitles. I don't get why Dragon Dynasty got lazy and just re-packed their Miramax release into the Infernal Affairs trilogy release. Bey Logan should have done a new commetary for it.

Yeah, they both have commentaries with Soderbergh and the writers.

I rented In the Valley of Elah and was disappointed in the lack of a commentary track.

Yes...he also did a good one for THE DEVIL RIDES OUT, one of my favorite Hammers along with RASPUTIN and SCARS OF DRACULA. But I would have liked one on THE MUMMY or HORROR OF DRACULA

-sigh-

I will second the Strange Brew in character. That would have been great. They did one on Brother Bear and it was fantastic.

Escape From LA. Love the Carpenter and Russell commentaries...

I'd love to hear Jaws as well.

However, any commentary by Speilberg would be great to hear. Has he ever done one?

newsflash - there were alot of extras that are no where on the standard DVD edition of the film. Bluray folk got everything but the kitchen sink in terms of supplemental material.

As others have mentioned, any title I own that doesn't have a commentary I would love to have commentary. If I had to pick a select few:

All Trey Parker / Matt Stone movies that don't have them
More Babylon 5 (JMS)
Quantum Leap (Anyone... Any extras would have been nice)
Dune (Lynch)
All Star Trek (Anyone)
All Coen Brothers Movies
Beetlejuice
Alien 3 (Fincher!)
Escape from LA (Russell / Carpenter)
Mimic (for del Toro, I've never even seen the movie, but would buy it if it had a del Toro commentary)
Manos: The Hands of Fate (Cast/Crew)

Edit: Did I really spell "Coen" wrong? Why do I do that?

It's always bugged me that the films in the Alfred Hitchcock Masterpiece Collection didn't have commentaries, even though many of the extras were well done.
