Havent seen this posted but in my opinion Planet of the Apes with the Ape Head will be a good contender. It includes everything from the tv show to all version of the movie and comes in a cool packaging.

Yeah, I agree with the guy who said Fanny and Alexander. The three and five hour versions of the film, a commentary on the three hour, Bergman's own, grand making-of doc, and well over two hours of otherwise special features. Plus a nifty booklet.
As for multiple film boxed sets...New Line's Harold Lloyd set contains almost all of the man's films; shorts and features, save only a handful. And a wealth of extras.

My pick goes to Disney's Platinum release of Aladdin. Great movie, reference video, remastered and original audio tracks (both in 5.1), superb limited packaging, and surprisingly in-depth and candid bonus features.

-All the footage from the "Lost Cut", the sandstorm sequence from ROTJ, the droid ship cut scene from Attack Of The Clones, and God knows what else

You guys have pretty much mentioned anything that I would list: The Superman Ultimate Collection, The LOTR Extended Editions, Alien Quadrology, Matrix Ultimate Collector's Edition Box Set, Back to The Future Trilogy, Clerks X, Star Wars, 3-Disc Wizard Of Oz (which I have yet to buy)...
Did anyone mention The Frighteners? I don't recall seeing it on anyone's list, but I may have missed it.
This thread makes me want to watch a bunch of "making of " documentaries.

DVD Talk Ultimate Edition
I would throw in one of my favorite dvds, Blade 2 - two disc. The dvd contains hours of bonus features including a video diary log showing how the effects and props were put together. Very enjoyable even if you hated the film.
