Bram Stoker's Dracula - Also a laserdisc release but this 30~ min making of was pretty good.

The Frighteners doc is on DVD. The "Director's Cut" DVD by Universal to promote Kong has 3.5 hours of it on one side and the hour-long "Storyboard" segment on the movie side of the disc, plus the audio commentary from the LD as well. I was very happy that Universal included everything, I was very worried they wouldn't as I had wanted to see this documentary for a long time.

Some great picks so far (the Hampster Factor from 12 monkeys, Requiem for Krypton from Superman Returns, 30 Days...from the Devil's Rejects, Full Tilt Boogie, The Frighteners Documentaries as well as the LotR Documentaries from the Extented Editions)

I'd Like to Add

the Full length docs on Clerks and Clerks II
The Fly Documentary
But 2 of my favorites in terms of extras would be I Heart Huckabees and the Alien Quadrilogy...

I agree on Jaws. Also, the documentary 'The Shark is Still Working' should be coming out in the near future and should be amazing with all the detail and participants involved. I'm super excited for it!

While the JAWS (& Amadeus) Docs were cool for info about the film they contained no "on the set" footage (apart for some stills). I was actually disappointed with both of them.

While not the best, certainly one of the most interesting I've watched is "Year of the Rat" from Willard. Not many behind the scenes extras would follow a film into its box office failure. It is an interesting watch.

The 197-minute American Pie Revealed documentary.

You think I'm kidding, but I'm not. Easily one of the neatest documentaries created specifically for a DVD release and not only is it in-depth, but it's also a blast.

I agree with you probably one of my favorites as well. Another great one that was already mentioned was the Star wars Episode 1 documentary, it was better than the film itself.

It was packaged with American Wedding when it first came out on dvd, since its Universal I am guessing that it is out of print, but you can always check ebay for it.

It's an easy/cliche answer, but I simply have to go with the Appendices of the EE Lord of the Rings sets. I've never set that much time aside to watch "making-of's" before, and I doubt I ever will again. They were beautifully presented, they showed EVERYTHING, and they made it seem that each movie was always a saber's edge away from utter disaster (especially when it came to Peter's mad-dash of editing near the end each time). The Appendices have made every other "making of" seem trite and insignificant to me.

the documentary in the X-MEn 1.5 DVD is pretty good and takes you through all the process of making the movie.

Far and away my favorite "Making of..." extras are the ones included with Black Hawk Down. Riveting stuff.
