There were a lot of commentaries on Dodgeball. There were like three hidden audio commentaries. I wouldn't be surprised if they are alternated or edited...
Speaking of which, the commentary seems to be different on the Unrated Talladega Nights to the Theatrical. The Theatrical seems to have a "25 Years Later" Track, while the Unrated has a different track with one of the actors and Adam McKay. This is similar to the Anchorman track: on the Unrated they swear for the first 10 or 15 minutes, while on the rated they talk about their day and pretend they didn't know they were rolling. As far as I know from the beginning 10 minutes on the tracks are the same. Kind of a rip-off.
To correct some of my previous suggestions: Ghostbusters only loses a the "live" angle, which puts the commentators on the screen. The Double Feature just has the audio and not this angle, and the Terminator DVD, I mean the features from the UE are not carried to the EE. The "Extreme Edition" is the currently available version.

I'm thinking that this is mainly a thread for people that want everything available for a certain title. And if you do, you already know that you need any Criterion, Superbit, and unrated/rated combo.
Maybe I could put a note in the title listing indicating something like, "the Criterion also has different documentary." Or "the Superbit also has a different trailer collection." But I'd rather not go out of our way to add those, as almost every Criterion will have at least one different tidbit than its regular release(s).

Alright, although I am saying the Unrated Talladega Nights has an entirely different (not just "unrated") audio commentary, with entirely different participants.
But if you are deleting this, then you should delete Dodgeball too. That's the same thing.

But in general, I think there isn't much need for me to list them, since rated/unrated combos will always have different features (at least commentary) I imagine.

Does any one have more specific information on some of these entries? What are the shorts missing from the Toy Story DVDs? Also what are the missing featurettes on the King Kong Extended Edition?

I don't know if you want to keep track of anime releases as well. Most anime double dips are simply repackages and repricings but there are a few exceptions. Here's some off the top of my head.
Neon Genesis Evangelion Platinum Edition - character profiles and the french and spanish dubs from the original release.
"Digitally Remastered" Dragonball Z Season 1 boxset - the spanish dub from the Ultimate Uncut Special Edition DVDs.
(It's also missing about twenty percent of the picture but that's a discussion for another thread.)
Ranma 1/2 OVA re-release - music videos and textless intro
Nearly all ADV thinpak boxsets have all of their extras removed from the original releases. The exceptions are:
