Which version of "Touch of Evil" is the best?
 
I recently bought the new 50th anniversary edition, and don't know which one I should start of with.

I would start with the version that presents the film the way the Director originally intended.

The 50th has the restored cut that matches Welles' original vision, as well as two earlier cuts, including the original theatrical. As far as I know, it's the definitive edition.

It apples and oranges when it comes to this film.

I would start with The original 1958 released version then after that watch the preview version then ended with the restored version.

Though I saw the original 1958 version first (in a film class back in my misspent youth), I actually preferred the preview version to the restored version--it was like the best of both other versions.
