How should I listen to 1, 2, and 3 Channel Audio using my dd & dts receiver?

I am curious, I have a JVC RX-8000VBK receiver, it supports both DD and DTS tracks. What settings do I need to switch my receiver to, to maximize my listening pleasure during mono, 2 channel, and 3 channel recordings? Or do I just leave everything the same?
