Some popular ones like the Gangster set (Public Enemy, Little Caesar etc), Hammer Horror set, new releases like Astaire and Rodgers and future releases such as Errol Flynn, Jean Harlow, or Lassie are not included.

These are great deals, yet I want to know what's the image like in comparison with some of the special editions out there? For example, is The Searchers on this 4-movie set as good as its single release?

For those titles that have separate special editions, you're getting the first disc of said special edition. I would assume the image quality would be similar unless the fact that these are two-disc sets with movie on each side of each disc would in some way compromise quality.
