I really do think the only reason some fans are holding on is because they're hoping for something drastically different than the TV show. While it's a possibility, I highly doubt they would have gone too far off the path without Martin's blessing, or else he would have raised a stink about how disrespectful it was to his ideas.
The first four seasons were a pretty faithful adaption of the first three books. When the tv series moved beyond those books, though, it started taking a lot of shortcuts, which can be seen in the abbreviated Greyjoy and Martell storylines.
The following stuff has been spoiled because it deals with how the tv series ended. I'm assuming that everyone here has watched it, but in the case they haven't, I'll use spoiler tags.
It wouldn't surprise me if the tv story followed Martin's plans for the books in broad strokes ([such as

GRRM said at an event tonight that was live-streamed that he’s 3/4 of the way through Winds.
He said he some chapters need to be rewritten some chapters after he re-read them and he’s having trouble with the Bran chapters.

I don't think he's ever going to finish. He wrote himself into a hole that he's unable to write himself out of.

Even if he manages to finish The Winds of Winter in the next couple of years, I don't think there's any way he will ever complete A Dream of Spring.
A Game of Thrones was published when he was 47. A Clash of Kings was published when he was 50. A Storm of Swords was published when he was 51. A Feast for Crows was published when he was 57. A Dance with Dragons was published when he was 62.
And now he's 74 with at least two uncompleted books in the series. And the way the story has been growing... A Dance with Dragons had to be split into two books (A Feast for Crows and A Dance with Dragons) and even then he had to remove at least a half a dozen chapters and two battles from that book and put them in The Winds of Winter. And that's not even getting into the Dunk and Egg stuff he still wants to do and the second of volume of Fire and Blood...

All of the blown deadlines and excuse-making reminds me of Harlan Ellison and The Last Dangerous Visions.
I really hope that Martin isn't one of those authors who demands that all of his unfinished stories and notes are burned upon his death. Because, one way or another, I don't think we're going to see this story finished without bringing in other writers.
