DVD special features that are super educational for film schoolers?

i was watching the Miller's Crossing special features, which included a super insightful lesson by Barry Sonnenfeld, teaching a little on the study of the use of wide-angle lenses, and it made me wonder what else out there by avenue of DVD special features would be educational for a potential film school student?

(sorry if there's a thread on this already - i tried searching).

There's an awesome feature length documentary about film editing on the Bullitt special edition.
