The Critic. That series should have gone on 20 years like the Simpsons. There would have been no end to the story lines the show could have tackled and there are always new movies for it to spoof.
Pushing Dasies, Wonderfalls, and Dead Like Me. But part of me wants to believe Bryan Fuller is the Danny Boyle of American TV and will someday have his own series that catches the imagination of many and do for him what Slumdog Millionaire did for Mr. Boyle
The Tick (live action). Fantastic cast, just very well done. We deserved more episodes. On the same level, and for the same reasons, Andy Richter Controls the Universe.
Nothing Sacred, a much too short lived TV show about an inner city church that never missed a beat. It just got knocked out of the ratings game by a powerhouse Thursday night line up on other channels.
Christy. Not exactly hard hitting TV, but I loved the short lived series and seeing it continue with the original cast would have been much better than seeing the direct to Pax movies that ended up getting made.

Cheers is the show I miss the most because it was like an old friend. It was a place to put your feet up after a hard day and listen to witty banter with people you felt like you knew.

Seinfeld really? You would actually want Seinfeld to be in it's 21st season now? Wasn't he already sick and tired of doing the show when it was in it's last season?
Regarding The Shield: The series finale was perfect. Plus 7 seasons for a cable show is a very long time. I think everyone on that show was ready to move on with their lives.
But, to stay with the OP's question and not thread crap, I would say Journeyman. I thought episode 13 worked as a series finale, but I could have easily seen this show last at least 5 seasons like a Quantum Leap with lots of compelling adventures.
Alot of shows have to go off the air because they become too expensive to produce as they get older and as the actors command larger salaries.

Of course all these shows were getting stale near the end, but I miss the glory days when I would plan my night around watching these shows, and still do today if they are in syndication.
