Master & Commander - really great use of surrounds, simulating being inside a creaky old wooden ship at sea.

I'll give you specific demo scenes:

U-571: The depth charges.
SW Ep. II- Attack of the Clones: Seismic Charges
T3- Rise of the Machines: The crane chase.
Master and Commander: I'll second the fact that the whole damn movie sounds great.
Return of the King- Theatrical (I believe its the theaterical and not the EE): Any battle scene from the DTS track.

I always test my audio with Gladiator, Matrix Reloaded, Brotherhood of the Wolf 3-Disc Canadian, and Kingdom of Heaven Director's Cut.

Haven't seen a thread like this in a very long time

Master and Commander is a must for surround, dynamics, and low range
U-571 for low range (depth charge scene as mentioned is perfect)
Titan AE - Ice Rings of Tigrin chapter for low range and dynamics
The Phantom Menace - Pod Racing scene for surround
Munich - Hotel Bombing scene for dynamics and low range
Super Speedway (DTS) - Surround and dynamics
Black Hawk Down - Surround
Matrix Reloaded or Revolutions - Surround and dynamics
Jurassic Park (DTS) - Surround, dynamics, and low range
Fifth Element - Surround, dynamics and low range
Animatrix - Surround, dynamics and low range

The Haunting (DTS) - Chapter 17: Bump In The Night

And a lot of times on QVC and Fry's and such, they will use The House Of Flying Daggers (I think it is) to demo home theater dvd surround sound systems.

I remember Jurassic Park was always used as the demo at electronic stores for years.

The theatrical version does not have a DTS track, just DD EX.

Cars - The beginning and finale races
Iron Man - The scene where Iron Man is chased by the planes. Also the cave escape sequence is cool.
The Incredibles - Pretty much every action sequence
Finding Nemo - The scene where Dora and Marlin are trapped inside that whale.
WALL-E - The scene where the scouting ship lands and/or takes off from Earth

A couple that I've always liked are:

Jurassic Park (triceritops breathing for the low bass)
Air Force One (Air Force planes flying around AF1 for the surrounds)

Finding Nemo is great for low range when Darla thumps on her uncle's fish tank.

I'm watching Wall-E right now w/ my daughter - Eve's arrival/departure are great surround/low range scenes.

Most, if not all, of the Pixar films have great surround sound tracks.

If you don't mind 70's Southern California music:

The Eagles - Hell Freezes Over dts version. The sound mix is incredible.
