Actors/actresses who never seem to age
Two offhand are Leonard DiCaprio and Mary Louise Parker. DiCaprio looks about 10 years younger than he is. He was good in The Departed, but at the same time, I don't really buy him as a tough guy.

Samuel L. Jackson will turn 60 (!) in December. DiCaprio will always look like a teenager, no matter how much facial hair he sports. Heather Graham looks much younger than 38.

Fucking hell! I had no idea she was 50. I thought for sure you made a mistake and went over to IMDB to confirm. And you are 100% correct. She had to have made a deal with the devil. She looks AMAZING!
I'd like to add Christian Slater to the list (turns 40 next year). And they're showing him on the big screen promoting his new NBC series in those pre-show spots and he looks like he's 30. At the very most!
Also, Kim Cattrell doesn't look 52.
Rick Springfield doesn't look 59.
Al Pacino, although not "young", doesn't look his age IMO.
Ashely Judd, 40!? No.
Johnny Depp doesn't look 45
Elizabeth Shue (also 45) looks AMAZING!!
Demi Moore (!)
