Just bought a 40gb PS3 and wanted opinions on the must-haves
Along with the unit I got MLB: The Show '08, NBA Live '08 and Fall of Man, plus dvd remote for $375. What are the other must have games on the PS3? I'll pick up GTA 4 later this month but are there other quality games worth picking up in the meantime. I don't own a 360 or plan on purchasing one.

First question has to be: Do you own a 360?
If yes then your question becomes: wanted opinions on the must-rents. As all the exclusives thus far are mostly rental material.
Ratchet & Clank is awesome. It's the first I've played though so the franchise was new to me. Others felt it was MOTS.
Heavenly Sword is probably my favorite on the console, but can be finished in about 6 hours.
Lair was fun but you have to be open to the controls. Also a 6 hour game. It's basically Rogue Squadron with dragons and a new coat of paint.
Motorstorm is fun and can be had really cheap now. I still enjoy Excite Truck more though.
Everyday Shooter is awesome(on PSN). A twin-stick shooter in the vein of Geometry Wars. I love this one.
Fl0W is pretty cool. Don't pay full price though, wait for a sale.
I still haven't got to Uncharted or Resistence yet.
If you don't own a 360 then you have far more options like COD4, Orange Box, R6:V2, and the like.

Since you don't/won't own a 360, I'd have to highly recommend Rock Band. This is a game that provides countless hours of entertainment for the single player and even more as a party game.

Oblivion: The Elder Scrolls - was reviewed as the best release of that game on console... if you don't already have it...
Virtua Fighter 5... the best fighting game yet on any platform...

Rock Band is my most played 360 title
Uncharted is my favorite PS3 title
I really enjoy Unreal Tournament 3 and Call of Duty 4 for their online play. CoD4 has a very cool single player campaign as well.
Ratchet and Clank is okay, but if you've played any of the previous ones, it's nothing new.
Assassin's Creed is a cool game, worth a rental at least.
Orange Box is a solid purchase as well.
If you haven't played it, Ninja Gaiden Sigma is a blast, and you may be able to find a cheap copy.
Tekken: Dark Ressurection (Download) is a great fighter.
My unasked-for opinion on other games: Resistence single player is incredibly dull and visually dated, but the multiplayer can be a good deal of fun (behind CoD4 and UT3). Avoid Call of Duty 3, though 4 kicks ass. I could never get into Oblivion, but it remains one of the highest rated games on this generation of consoles. The Rainbow Six Vegas games are a blast both online and off, Devil May Cry 4 is a good action/platformer.

Thanks for all the suggestions, I have the Orange Box and Oblivion on PC.
From the suggestions I think I'm going to check out:
Heavenly Sword, Uncharted, Vitrua Fighter 5, COD4, Ninja Gaiden. I don't think I'll be too interested in Ratchet and Clark, Assassin's Creed (I heard repetitive) or Rock Band (I just don't think I'm going to have too many people over that would be interested in playing it).

One thing that's been failed to mention so far: Several of the titles listed here are available through the Playstation store for a free demo.
Uncharted, Ratchet, Heavenly Sword, Resistence, to name a few.
Although some are not representative of the game as a whole, you'll still get a good sense of them.
Plus, you'll change your mind about Ratchet.

Pixel Junk Monsters
Are, in my opinion, the only two games on the PS3 I've played worth their price.
R&C is one of the best games of this generation, and I say this as someone who never played a R&C game and hates 3D platformers.

I just got Ratchet and I'm really enjoying the game. It looks really good, it plays really well and it's a lot of fun.
Most of the time I'm playing FPSs (Halo, COD, etc.) or Sports games, so a platformer like Ratchet is something really good for a change of pace.

Also, if you're going to dismiss Assassin's Creed as repetative, which it admittingly is at times, I would recommend you avoid Heavenly Sword entirely.

If you are getting a 360 Id save the dual platform games for that one. I just got a Ps3 and will only use it for bluray and exclusives. the gaming experience as a whole (multiplayer) seems better on the 360.

If you have your PS3 online...and I can't believe this hasn't been mentioned yet...Warhawk is an absolute must-buy. I've probably put 80 hours into the game, and I suspect it's one of those that I'll always come back to.
I also enjoyed Motorstorm quite a bit, and Uncharted was really good (but probably a rental given lack of length or replay value).

Oblivion - life suckingly awesome but you know that if you own the PC version
Call of Duty 4 - awesome single player and a super fun online mode
Assassins Creed -beautiful game with smooth gameplay. good for a rental at least.
Ratchet and Clank - beautiful and fun.
Ninja Gaiden Sigma - hard as balls
Def Jam Icon - I thought was cool
MLB The Show - look me up for an online game
Oblivion - life suckingly awesome but you know that if you own the PC version
Call of Duty 4 - awesome single player and a super fun online mode
