I also love short story collections. Here are two I think are worth your time:
The World’s Shortest Stories edited by Steve Moss.
Every story in this anthology, over 200 pgs. long with drawings, is just 55 words long or less. Yes, 55 words, that was not a typo. Some of them are stupid, but there are a few that, at least for me, will take more than one reading to comprehend; that's because they are so cleverly written.
The second book is:
The Decapitated Chicken and Other Stories by Horacio Quiroga. (I read the Spanish version: Cuentos de Amor y Locura y de Muerte, so I can't vouch for the translation.)
Most, if not all of these stories take place in South America. Most of the stories I would classify as classic horror, nothing gory, just weird things happening to people. I'm not doing this one justice here; there are some good reviews of this book at amazon.

Too busy to come up with any original suggestions at the moment but you might like to try here for science fiction, general, mystery, fantasy, online and contemporary short stories.

The Years Best Science Fiction comes out every year. It's huge, inexpensive, and contains absolutely amazing stories. Some are fun, some are thought-provoking, and some are just plain marvelous pieces of writing.

I second the Best American Short Stories collections.
The Scribner Anthology of Short Fiction is great, too.
You can pick up several of the O. Henry Prize collections for under $5 apiece at bookcloseouts.com.
