Help me identify an arthouse type of war movie

This has been driving me nuts! I tried imdb and google without any luck. It's a movie produced in 90s or early 00s and the plot involved cannons playing a decisive role to defeat an opponent (cavarly) during medieval type of an era. Other things that I remember are:

-The constumes looked Italian or French and the director was probably one.
-There is a scene when soldiers burn a wooden figure of Christ for fire from a ravaged church and the higher ranking protagonist (?) flips out by stabbing and pushing a soldier into the fire.
-There was a lot of snow!
-Dialogue was very sparse but it could have been English language.
-It was very slow-paste with long takes, kinda like Andrei Tarkovsky but felt like Kurosawa's Kagemusha and Ran (battle scenes and etc).
-I think the movie summary was something along cannons shifting the balance of power and creating a new warfare in Europe.
-The title could have been something along Men at Arms, Brotherhood at Arms or something-something-war.

I need the expertise of movie fans at DVDTalk.

I found it! I did a bunch of keyword search on war genre at imdb and "arms" lead to "The Profession of Arms." It doesn't look like it's available on DVD and that's a pity. Anyway thanks for taking the time and if anyone is interested in Tarkovsky/Kurosawa's later epics - this film felt like a very good companion.
