So is FOX just going to follow its original plan for the remaining shows that would have conflicted with a 7 game World Series? I also noticed that Bones and House aren't back until next week too. (Oddly, Gossip Girl isn't new until next week too - because of Halloween?)

Wha? New episodes of Bones (she's dressed up as Wonder Woman in the commercials) air tomorrow, plus House should be new as well.
Even if the World Series was still going on, Tuesday would be a travel day back to Boston, so Fox would be airing new episodes of Bones and House.
