Heat should be on any top 10 list simply because it is one of the few spectacular movie gunfights that doesn't wander too far away from realism.
Nothing from John Woo deserves to be on any list, IMHO.

The greatest movie gunfight is the end scene of The Good, The Bad, and the Ugly. Hands down. It's a masterpice, in editing, cinematography, musical score, acting, and so much more.

L.A. Confidential, Leon, Raiders of the Lost Ark and Terminator 1 & 2 should be up among top 10s.

The gunfight is at about 8 minutes in, but the setup is good. I've loved this since I was a kid.

I second Open Range and toss in Way of the Gun (the slow chase gunfight and the finale).
Scarface? Was that even an actual gunfight? More like random spraying of bullets!

The Way of the Gun has my favorite gunplay in a movie that I've ever seen. An insanely underrated movie.
-Oh wait. I Netflixed Open Range and I have seen it.
Spoiler:
The Way of the Gun still reigns as my favorite.

SPR is a war movie, it's a different genre and a different type of scene, not sure why it's on the list.
Other to consider:
Kitchen scene in La Femme Nikita
First assault on alien lair in Aliens or the command center raid scene

For realism, I have to put Open Range up there (along with Unforgiven's ending scene between Will Munny and Little Bill).
Most of the ones I liked are due to style and camera work, not necesssarily for realism.

Scarface doesn't really earn this place on this list...
The end gunfight at the train station in Carlito's Way is way better IMO (The film is better as well IMO)
Also you really gotta give it up for John Woo and his work in Hard Boiled, The Killer and Face/Off

I second the end of A Better Tomorrow II. That shootout is an insane-o-rama. Drexl's watching it in True Romance when Samuel L. Jackson comes to his motel room. The reason why I wanted to see those movies too.
