The Gumball Rally featured a 427 Cobra, so I have to go with that one.

Gone in 60 Seconds (remake) has a GT500, so I gotta love that one too. When they re-released that DVD, I thought they missed the boat on an obvious extra. When they put out the Pearl Harbor Director's Cut 3-discer, they had that awesome isolated attack sequence with the dialogue somewhat muted so you could really get into all the sound effects. They should have done the same thing with the Eleanor chase sequence. They would have probably got extra sales from folks who didn't particularly like the movie, but wanted that sequence to show off their HT sound system.

Now if someone would use a Ford GT in a movie...

I can't think of any I really like. Death Race 2000 is pretty cool, but other than that I'm not a fan of racing films.
