Who wrote it and what artists have performed and or recorded it?

It was written by Tony Joe White and I think he recorded it for his first album in 1968. The title of the song is "Polk Salad Annie" you could do a search on google and see who else may have recorded it. I have it on a CD titled The Best of Tony Joe White that is on Warner Archives. I had heard another song on this CD recorded live by Rory Gallagher on his Irish Tour 74 album called "As The Crow Flies" so I thought I'd check out the man who wrote its version. The cover is much better than the original.
