PS2 Games with Progressive Display
what do you need to use the progressive modes on games like Jak2 and Prince of Persia? Do you just need component cables and a HD monitor?

Nope, there's no settings in the PS2 system options. Each game will have the setting in their own options menu. Like you said, just the component cables, and a HD monitor is all you need.

Actually, that's not entirely true. Sometimes you need to hold down a button while the game is loading up. It's either triangle or X. I forget. Do a search for HDTV videogames. There are a couple sites dedicated to it.
Xbox has the largest amount of HD games. They're almost all 480p, and there are a handful of 720p and 1080i. Gamecube's got a decent amount of games that run in 480p. PS2 has only a handful of 480p titles for some reason.
