If you want something VERY challenging and realistic, you could try Grand Prix Legends. It's probably $5 in bargain bins now, and I even think it's been included with some gaming magazines in Europe. It's a simulation of the 67' F1 season, so you have cars with treaded tires and no wings for downforce, making the driving a challange, but if you can get the hang of it, it's a blast just to drive around the tracks.
For modern F1 games, there is Grand Prix 4 and F1 2003.
NASCAR has NASCAR Racing 2003
Any of the Need for Speed Games
Rallisport Challenge

need for speed porsche has been my favorite for a long time.
To suggest more, I need to know more about what kind of racing you want to do, and how realistically?

Any racing game by Papyrus (Grand Prix Legends, Nascar Racing 2003). Depending on what you are looking for however, they can be a bit overwhelming. The are fairly detailed sims and require some understanding of how the car works and how to set them up. Of course you can always find downloadable setups on the net. If you're an aracade racing type of guy, I would suggest Need for Speed or Midnight Club II.
