Arer they no longer allowed to say shit on network TV after a certain time? I seem to remember NYPD Blue throwing in a "Bullshit" at least once an episode.

Well I think that can only happen on network TV after 10pm. Since NBC has no series programmed in that time slot any more thanks to the Jay Leno show, they'd have to bleep stuff as the show was usually airing in the 9 o'clock hour.
